Marshmallow Brownie Ball Bites with White Chocolate Drizzle and Coconut “Grass”

Even though my children have all grown too old for to still wait up for the bunny, we still adore any moment we can celebrate as a family. Easter is the perfect time for a gathering of friends and family. One that demands a big meal and of course delightful desserts. Brownie bites with marshmallow are the perfect danty treat. They are small enough for wee ones and the ideal finger food dessert. One that everyone will be going back for more and asking for your secret recipe!

Easter Marshmallow Brownie Ball Bites

Every successful recipe begins with the right ingredients. For the best brownie ball bites we decided to go with a Glutino double chocolate brownie mix base. This is great for families that have someone who is sensitive or just choices to be gluten free. In my opinion, you cannot tell the difference in taste. However if this is not your thing, you can go with a any brownie box mix as well.

The Glutino ingredient list also includes two eggs and melted butter for the basic brownie. You will also need marshmallows. We like the color ones to celebrate Easter when treating our Easter guests to these delicious brownie bites.

For the white chocolate drizzle, you will need creamy vanilla chips or white chocolate chips and green food coloring. To create the decoration including a grassy look, you will need to buy coconut flakes and Cadberry Milk Chocolate Mini Eggs (or you can also use jelly beans).

First things first! Start by preparing the Glutino double chocolate brownie mix base per the box instructions. Then, fill each cake pop halfway with brownie mixture. Next, you will insert 1 marshmallow in center and continue to pour more brownie mixture over the marshmallow and top each ball off.

Bake the brownie ball mixture for approximately 18 minutes. Once completed, be sure to remove from heat and let cool for 1 hour. The cooling process is very important. You can even make the balls a day in advance.

To create the chocolate drizzle for the top, you will add your chips to mason jar or small microwavable bowl. Microwave these for 1 minute; then, remove and stir until they are creamy. To create the color, you will need to add 1 to 2 drops of green food coloring (depending on your desired level of color). Stir the color in well or until the color has been distributed evenly and you are satisfied with the tone created. Once desired color is achieved, drizzle the chocolate mixture onto brownie ball bites and let sit for 15 minutes.

While waiting, it is time to create the coconut decoration, “Grass”. You will do this by adding coconut to medium size container with lid and slowing adding in few drops of green food coloring. Close the lid and shake vigorously until color is evenly distributed. Place the coconut grass in a serving dish adding marshmallow brownie ball bites and Cadberry milk chocolate mini eggs atop coconut.

Now you are ready to show off and serve the Marshmallow Brownie Bites during your Easter celebration!

Double Chocolate Brownie Ingredients (as per box)
  • 1 Box (16oz) Glutino Double Chocolate Brownie Mix
  • 2 Eggs
  • 1/3 Cup Melted Butter
  • 18 Small to Medium Size Marshmallows
White Chocolate Drizzle
  • 1½ Cups Creamy Vanilla Chips
  • Green Food Coloring (or another color of your choosing)
Decoration
  • 2 Cups Coconut Flakes
  • Green Food Coloring
  • 1½ Cups Cadberry Milk Chocolate Mini Eggs
Brownie Ball Bites Instructions

Double Chocolate Brownie Mix(as per box)

1. Preheat oven at 350 degrees F. Spray cake pop pan with vegetable oil. Beat eggs for 2-3 minutes in large mixing bowl. Slowly, stir in dry brownie mix. Continue to beat until moisten. Add butter and stir until combined.

2. Fill each cake pop halfway with brownie mixture. Insert 1 marshmallow in center. Continue to pour more brownie mixture over the marshmallow and top each ball off.

3. Bake for approximately 18 minutes. Remove from heat and let cool for 1 hour.

Chocolate Drizzle

4. Add white chocolate to mason jar or small microwavable bowl. Microwave for 1 minute. Remove and stir. Microwave another minute. Remove and stir. Add 1 to 2 drops of green food coloring (depending on your desired level of color). Stir well or until the color has been distributed evenly.

5. Drizzle white chocolate onto brownie ball bites. Let sit for 15 minutes.

Coconut “Grass”

6. Add coconut to medium size container with lid. Add green food coloring. Close lid and shake vigorously or until color is evenly distributed.

7. Set coconut grass in a serving dish of your choosing. Place marshmallow brownie ball bites atop coconut. Add Cadberry milk chocolate mini eggs for decoration. Serve and enjoy during your Easter celebration! [/recipe]
