One of the most important things on our weekend to-do list is our weekly Sunday morning breakfast. This is one of the few meals we all take time to come together to sit, eat and talk about well everything under the sun. While I take this meal very seriously, I also like to cut back on some of the cook time for more family time. One of the best ways I found is inputting quality box mixes into our recipes.
In fact you will be hard pressed to find our cabinet lacking Mrs. Butterworth’s pancake mix. It is just one of those things that I like to keep on hand for big meals and even special breakfasts during the week for my Low. I have yet to master a home created pancake mix that comes out as fluffy and delish as Mrs. Butterworth’s. That lady company just has a great thing going and who am I to question the method of cooking madness.
Now just because I cut the corner with a box mix doesn’t mean that I lack creativity. No sir’re! This momma can make the best of anything including our Chocolate Chip Peanut Butter Pancakes below made with none other than…… Yes, you guess it: Mrs. Butterworth’s Original complete pancake mix. So get to cooking and enjoy!
Mrs. Butterworth’s Chocolate Chip Peanut Butter Pancakes
You will need:
- 2 cups Mrs. Butterworth’s Original complete pancake mix
- 1 1/2 cups water
- 2/3 cup peanut butter
- 1/2 cup mini chocolate chips (save a few back for garnish with serving)
How To:
- Whisk all the ingredients together, cook on medium heat on a non stick pan over stove top.
- Once bubbles start to form in center of pancake, use a spatula to flip pancake and cook on other side.
- Serve hot with Mrs. Butterworth’s original syrup, whipping cream and mini chocolate chips.
