This month’s Blogger Food Challenge theme is Herbs and Spices. Can you see the terrified look on my face? Well, I sure wish you could. Though just like with any obstical you put in my way, I will find a way to beat it or at least do my very best. Today, we will be starting off this challenge with what on think to be a difficult recipes – made simple.
Feta and Spinach Stuffed Sirloin with Balsamic Glaze is elegant enough for Sunday afternoon company but simple and fast enough for a weekday meal. Packed with delicious and flavorful ingredients this is a favorite of the grown ups in my house, and chopped up is a hit with the kids as well ( they think it’s a steak salad). The balsamic glaze and Feta add a tangy kick that compliment the steak and spinach perfectly. Serve with mashed potatoes on the side for a delicious dinner (maybe a glass of red wine for mom).
Feta and Spinach Stuffed Sirloin with Balsamic Glaze
Ingredients:
- 1 lb thinly sliced sirloin steak
- 1 8 oz. package of feta
- ‘3 cups uncooked spinach, chopped or torn
- 2 tbsp. olive oil
- 1 tsp. oregano
- salt and pepper to taste
Balsamic Glaze Ingedients:
- Balsamic Vinegar
- Brown Sugar
- 2 cloves Garlic, crushed
Directions:
- Begin by laying out your sirloin steak- salt and pepper liberally.
- In a medium sized bowl combine chopped spinach, oregano, and feta.
- Sprinkle feta mixture all over steak to cover with a thin layer.
- Begin at one end of sirloin and roll tightly.
- If you have a very wide piece of sirloin like I did you can cut straight down the middle after rolling to create to smaller pieces, insert toothpick in center.
- Heat Olive oil in a well seasoned cast iron skillet over medium.
- When oil is heated, lay steak rolls in pan.
- In a small saucepan over medium heat whisk together Balsamic vinegar, brown sugar, and crushed garlic, simmer for 5 minutes or until mixture thickens.
- Cook on each side for 2 minutes until browned.
- Drizzle Balsamic glaze over steak rolls.
