Summer is officially here and to celebrate, I want to share one of my favorite desserts, Banana Lime Cake. Marriage of amazing flavors, perfect for your next summer get-together.
Banana Lime Cake
Dry Ingredients
- 3 cups flour
- 1/2 teaspoon cinnamon
- 1 teaspoon baking powder
- 1 teaspoon baking soda
Wet Ingredients
- 1 cups sugar
- 1 cup oil
- 2 eggs
- 1/2 cup milk
- 1 teaspoon vanilla
- zest of one lime and 1 tablespoon lime juice
- 3 cups mashed bananas
- 1 cup pecans chopped
Directions:
- Pre-heat over to 350.
- Grease cake 13×9 cake pan with Baking Spray or Oil with a Flour Dusting
- In a large bowl cream the sugar, oil, eggs and milk till well blended.
- Add in the vanilla, lime, bananas and nuts.
- In another bowl combine your dry ingredients together.
- Add in wet ingredients one cup at a time.
- Mix for 2 minutes on medium speed.
- Spread batter into a greased sheet pan.
- Bake at 350 for 25-30 minutes till toothpick comes out clean.
- Allow to cool, then frost.
Lime Frosting Recipe
Ingredients
- 4 oz cream cheese softened
- 2 cups powdered sugar
- 1/2 tablespoon lime zest
- 2-3 tablespoons milk
- 1 teaspoon vanilla
Directions:
- Cream the cream cheese and sugar together.
- Add vanilla and lime and mix well.
- Add milk till desired consistency is achieved.
