Looking for a great treat for an upcoming event or tea party? Maybe you just have a taste for slightly sweet pastry that pairs beautifully with coffee and tea. The scone is a wonderful choice. White chocolate and cranberries are some of my ultimate add to mix ingredients and I hope you’ll agree after trying the recipe below.
White Chocolate Cranberry Scones
Ingredients:
- 1 cup all purpose flour
- 1 cup whole wheat flour
- 1 tablespoon baking powder
- 2 teaspoons sugar
- pinch of salt
- 2 squares of Baker’s White Chocolate roughly chopped
- ½ cup dried cranberries
- 1 1/2 cups heavy whipping cream
Directions:
- Preheat oven to 450C.
- Place dried cranberries in a bowl and cover with hot water. Set aside.
- In a medium-sized bowl, whisk together the flour, baking powder, salt and 1 tsp sugar.
- Dry cranberries and stir into mixture.
- Mix in chopped white chocolate.
- Add cream and stir until the mixture just comes together.
- Knead the dough a few times.
- Pat the dough into a flat round about one inch thick and cut into eight wedges. Sprinkle with sugar.
- Place wedges on a baking sheet and bake for 12 to 15 minutes, until the tops are golden brown.
